Cranberry Sauce

For barbecue Side Burner or Stove Top

  • ½ tablespoon olive oil
  • ½ small red onion, diced
  • Freshly ground pepper
  • salt
  • ½tablespoon corn flour
  • 1 ½ cups cranberry juice
  • 1 orange, finely zested and juiced
  • ½ tablespoon Dijon mustard
  • 3 sprigs thyme, leaves removed
  • ¼ cup port
  • 170g dried cranberries


Step 1
For barbecue side burner or stove top

Step 2

Add the olive oil to a small saucepan. Heat the oil over a medium heat. Once the oil is hot add the onion and season with salt and pepper. Cook the onion for 5 minutes or until tender.

Step 3

Stir in the corn flour, cranberry juice, orange zest, orange juice, mustard, thyme, port and cranberries.

Step 4

Stir the sauce well and bring to the boil.

Step 5

Once the sauce is boiling reduce the heat to low and simmer for 10 minutes or until thickened.

Step 6

Once thickened remove from the heat and set aside to cool.
