Crackling Roast Pork

  • 1 to 1.5 kg rack of pork
  • Olive oil
  • Salt


Step 1
Preheat the barbecue for indirect cooking.

While the barbecue is preheating, take the pork out of the fridge.

Step 2
Dry the skin of the pork and score the skin if the butcher hasn’t done this already.

Rub a little oil into the skin. Give the skin a good coating of salt.

Step 3
Once the barbecue is preheated, turn the centre burner off and leave the outside burners on high.

Step 4
Place the pork on the centre of the grill. Close the lid and leave the outside burner on high for 20 minutes to crackle the skin.

Step 5
After the 20 minutes, turn the outside burners to medium and continue to cook the pork for a further 3/4 – 1 hour.
