  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon chilli powder
  • 1 teaspoon fine sea salt

Step 1
Set up and light your Smokey Mountain Cooker as per the instructions in your handbook.

Step 2
Once the smoker has reached the desired temperature, add 4 chunks of Weber Firespice Hickory wood through the front door.

Step 3

Step 4
To prepare the sweet, salty and spicy nut; in a large bowl pour in the mixed nuts. In a microwave safe bowl, melt the butter and maple syrup together. In a small bowl mix together the brown sugar, cinnamon, chilli powder and sea salt. Pour the melted butter and maple syrup mixture over the nuts, toss to evenly coat. Sprinkle half of the sugar and spice mix over the nuts, toss, then pour the remaining sugar and spice mix on top, again toss to evenly coat. Pour the mixture into two small drip pans, ensuring any leftover sugar and spice mix is added (this will create delicious clusters).

Step 5
After 10 minutes, smoke should be visible coming from the top vent. Place the drip pans on the cooking grill and close the lid. Smoke the nuts for 3 hours, mixing the nuts every hour.

Step 6
Once the nuts have smoked for three hours remove from the smoker and allow to cool completely.
